Makes 20 servings (2 loaves)
Recipe:
Ingredients-
4 cups all purpose flour
2 tsp baking soda
1 tsp salt
1 tsp ground cinnamon
1/2 tsp ground nutmeg
2 cups sugar
2/4 cup butter or margarine, softened
4 eggs
1/2 cup water
1 can (15oz) pumpkin (NOT pumpkin pie
mix)
1 cup plus 2 tablespoons semisweet
chocolate chips
2 tsp sugar
2 Tbs chopped pecans (optional)
Directions-
Heat oven to 350 F. Grease only bottom of two 8x4in loaf pans with shortening and lightly flour (or spray with cooking spray, no flour)
In medium bowl, stir flour, baking soda, salt, cinnamon and nutmeg until mixed; set aside.
Add eggs one at a time, beating well after each addition.
Add flour mixture; beat on low speed about 1 minute or until moistened.
Stir in 1 cup of the chocolate chips.
Spread evenly in pans.
Sprinkling tops with remaining 2 tablespoons chocolate chips, sugar and pecans.
Bake 1 hour 5 minutes to 1 hour 15 minutes or until toothpick inserted in center comes out clean. Cool in pans 10 minutes.
Remove from pans to cooling rack. Cool completely before serving. About 1 1/2 hours.

NOTES:
1. I substituted 2 cups of all purpose flour for 1 1/2 cup whole wheat flour. So I did 2 cups all purpose, and 1 1/2 cup whole wheat.
