Strawberry Nut Bread

Makes 10 servings (1 loaf)

Nutrition- Calories 298, Total Fat 18.3g (2.2g sat fat), Sodium 342mg, Carbs 32.3g, Fiber 3g, Sugar 21.4g, Protein 4.3g
Recipe:

Ingredients-
          8 oz strawberries (thawed, drained)
          1 cup sugar
          5/8 cup olive oil
          2 eggs
          1 1/2 cup flour
          1 1/2 tsp cinnamon
          1/2 tsp baking soda
          1/4 tsp salt
          1/2 cup chopped nuts


Directions-
Preheat oven to 350 F.  Grease only pan bottom with cooking spray.

Slightly mash strawberries, set aside. 

In large bowl, mix sugar and oil. 


Stir in eggs until well blended. 

Stir in strawberries.

Stir in all remaining ingredient minus nuts. 


Stir in nuts.

Pour into pan.

Bake 1 hour or until toothpick inserted comes out clean.  Cool in pan 10 minutes.  Put on wire rack.

NOTES:
1. I usually use almonds as the nut, they tend to be a little healthier and I like the taste!
2. This bread can store at room temperature for 4 days or in refrigerator for 10 days!
3.  GREAT with strawberry jam on top!
